I had some BBQ pork spare ribs leftover from the 4th of July and so last night I made them into BBQ enchiladas.  Some of my best, though not as good as the BBQ duck enchiladas I did maybe a year ago.  I need to make those again.

My wife and I decided to do a fancy dinner at home and she says to our 11yr old, we will get pizza for her and her sister.   

Our oldest, Incredulously asks, why can't we have a fancy dinner too?   What exactly will you eat that is fancy we ask her.   So she and her sister ended up dressing up as fancy waitresses and handled all of the table service for us.   

Of course we still did all of the cooking and shelling, surf and turf w King crab legs being the turf.  We finished the food and were ushered outside .  Kids made us come in the front door and they seated us.
Fun times, one little snafu w the music but we did tip them with their owed allowance.

When making enchiladas I always feel like I mess up the tortillas.  I can never get the texture where I want it.

I've done similar things with my daughters back when they were that age

Our oldest (about to be 13) has always been pretty good for a kid about eating (i.e. all the kids eat their veggies, don't complain, etc), but now he's becoming more and more adventurous with his eating. I think half of it for him is wanting to be like adults, but the other half is that he's starting to learn that adult food is delicious.

Last time they were here it was his first time eating pesto. Last night my wife made sausage & peppers over zucchini noodles.

He's got a "cookbook for kids" that has a recipe for panko-crusted cod, and that's what he wants to try next.

BTW I know that most of you with kids probably already know this, but a great way to get them to try new things is to have them help make it. Funny how much more willing they are to eat a food if they've helped prepare it. And they're unconsciously biased to say they like it even if they'd have turned up their nose otherwise, because they've got some ownership in the process.

Heh. We stopped regularly taking our kids out to dinner once they figured out that there is more to life than chicken fingers. Got a little too pricey, really fast.

Made don't risotto for the first time three other day. It was good, but I don't typically eat risotto so not sure what I was going for

I only make it if I have my own chicken stock.  It is a good, satisfying dish, but I doubt I've made it between May and September.   Even then. Gotta wear a t-shirt w all the wood spoon stirring the risotto in The La Cruscet w a  hot pan of stock.

We do risotto in the instant pot most of the time. We use veggie stock due to my wife's poultry allergy.

I made risotto it using seafood stock last week. Had some shrimp and lobster shells, added those to a vegetable stock (store bought) and also added a can of tomatoes, red chili flakes, fresh herbs and fresh garlic.

Added wild mushrooms and lobster meat to the risotto. It came out wonderful.
