I don't buy it a lot, but when I do I make sure the chicken is ground thigh.

Making ground chicken burgers, how do you guys cook them?  I do flattop grill, but it's always hit or miss between burning the outside and cooking them through.  Should I greatly reduce the temp?  Frying in oil instead?

I want to try low and slow, and then sear them at the end?

Yeah, I can't do patties with the texture of ground chicken or ground turkey. 

But I don't mind using either in something like a pasta meat sauce, they work fine for that.

That's what I do with them mostly. They can be good for meatloaf or meatballs too. I've done that.

Yeah, sausage works too.  That Jenny-O Italian turkey sausage isn't half bad.

WFH means midweek chicken stock.  First batch since early CV.  Great aroma.

Pork shoulder was on sale - going to make green chili in the instant pot today.
