Well the lettuce for sure to block moisture from the tomatos/pickles also.That's how I do it and always browned the buns on a skillet w/butter

Didn't know real cheese was a polymer.Then truth in advertising would state liquified polymer on you burger/pasta/sammich/whatever.Not sure that would sell as good

So, is your point that cheese doesn't melt related to cheese not being a solid but rather a very firm gel?
To the layman, shredded cheddar cheese "melts" when you put it on a hot hamburger patty.
