I'm not a civil engineer (graduate) as you know, so my background in structures is far less than yours.

Since it started at the bottom, does that tell you that the sinking could be the root cause for this?
As some notorious individuals can tell you, it's really hard to compromise the integrity of a column from outside the cross-section. But if the footing underneath the column has problems, look out. That is why bridge engineers spend so much time working with and modeling scour. Given that there had been damage done to some concrete in the pool deck area prior to this collapse, I'm willing to buy some of "Uneven pier settlement caused a column to let go". There was a condo tower on South Padre Island that had to be imploded during construction due to too much and uneven settlement.

Piles of buildings are generally driven to bedrock, and especially in places like Miami Beach where the subgrade is just one giant sand dune at sea level. The underlying bedrock (assuming the piles got there) is karst limestone, which is very susceptible to water degradation. 

Add in that this building is from the pre-Andrew cocaine cowboys era of south Florida (weaker building codes, dubious material selection, and lax enforcement of said codes), and there could be a lot more where this came from.

I save my own bacon fat as my mother and grandmother, but I would mind trying a bucket of that stuff if it's not too expensive

Anybody here now eat Vienna sausages?  I did on occasion as a kid, they were like, well, tasteless globs of goo.  I think even less of them now.

I'd rather eat Spam.  In Hawaii.

My Dad likes the sausages for some reason, on crackers.  Is there something to them I miss?  I see them in the stores today.

I saw some brisket at Costco and took a flier.  Heat up in microwave, well, it's OK, not great, but OK.

The wife however concocted this "taco" version with her homemade slaw, guac, maters, holy cow, is that good.  The slaw somehow sets it off.  I didn't even add jalapenoes.

The brisket by itself is decent, not great, but edible and quick.  She was really taken with it too.

brisket is only good one way.  Low and slow

I'm not sure warming it in the microwave or grinding it in Burger is worth it.

Warming leftover brisket in a pot O Texas chili is decent

it's not s desirable cut of beef

The Costco brisket is already low and slowed, so the microwave is solely to reheat it.  It's better, by a notch, than the "BBQ" you can buy at Kroger, that is, well, something.  It's better than McRib.  Ha.
