I haven't dug into the PAC at all. Does Utah return a good bit of their team?

Agreed.  

It will be interesting to see how Utah does in 2022 and beyond.  They finished 10-4 and #12 in 2021, good for them.  Also, they finished on a tear.  They started just 1-2 with an FCS win and two bad losses (BYU and SDSU).  After that they went 9-2 with a road loss to the Beavers and the Rose Bowl loss to Ohio State.  Their biggest accomplishment of 2021 was beating the higher ranked Ducks not once but twice.  

Their defense was superb most of the year (held Oregon to a combined total of just 17 points in TWO meetings) but seemed to disappear in games against teams with the initials "OSU".  They gave up 468 yards and 42 points to Oregon State (this was the most points scored by OrSU all year) then got torched for 48 points and almost 700 yards in the Rose Bowl with the Buckeyes setting multiple Rose Bowl records in the process.  

Can the Utes build on last year or will it turn out to be a mirage?

They have some key pieces back such as their starting QB and RB and they have a CB who I think may end up being a first rounder some day.  I believe they lost some of their front-7 pieces, including a star LB.  I would put them as the Pac 12 favorite right now, but can they come to SEC country and steal a win against the Gators?  And how good will those Gators be?  Another 6 win team, or do they put it together and make a play for the SEC East.

I'm not sure about the Oregon State game, but against the Buckeyes they were very injured in the secondary.  They basically had a running back starting back there, so although JSN had a monster game, let's not get too excited.

From the perspective of Utah, I think that the OrSU game is a much bigger concern.  You can chalk up the RB to injuries or end-of-season or just it is the Buckeyes, they scored a lot of points on most opponents. The Buckeyes were an 11-2 team that finished ranked #6 and Ohio State scored at least 48 points last year in six other games (Akron, Rutgers, Maryland, Indiana, Purdue, and MSU).  

Oregon State is different.  The Beavers finished unranked and barely over .500 and scored at least 42 points in only three other games (Hawaii, Idaho, USC).  

Maybe OrSU was just "one of those days".

That game was also late October.  They were 4-3 after that game, but then won 6 straight games including the 2 beatdowns of Oregon.

Interestingly, I have found no chili parlors around here, at all.  Some places offer chili of course, but usually as a "condiment" to a burger. Brunswick stew I suppose is the substitute, which is fine with me, though I like both.  With grits.
