Any advice for beef tenderloin? My FIL got a chunk of one and we're cooking it for Christmas dinner.

I do like reverse sear method (either utilizing sous vide or even w/o).   I did this for my standing rib roast for Thanksgiving.

Not exactly a recipe but my wife put together a charcuterie board for NYE.

I thoroughly enjoyed it.
