I tried the Copper Kettle in Dubuque on a local tip for the best wings

Michelin history was made last night in San Diego. Californios, chef Val Cantu’s San Francisco tasting menu destination, became the first Mexican restaurant in the world to earn three Michelin stars.

The French gastronomic guide revealed all the restaurants earning stars across the Golden State in a ceremony that also saw Sonoma’s Enclos by chef Brian Limoges rocket to three stars after only being open for around 18 months.

All I can picture is the same 5 traditional ingredients, but smaller and separated.

Topolobampo is a Mexican restaurant in Chicago with 2 stars. It's fantastic and not typical.

This menu ended yesterday. It will be interesting to see what he comes up with next.

Those are actually klobasnek not kolaches.  Kolaches are filled with fruit and/or cream cheese.  But lots of folks in and outside of Texas mistakenly refer to the savory meat filled pastries as kolaches and so here we are.

There was a very large Eastern Europe population in Chicago and Kolaches were a staple at every grocery store. My Polish gramma used to make them too.

Lots of Czech settlers around CenTex, so kolaches are a staple at most bakeries  around here.   And klobasnek, too!

But interestingly enough I had to look all over Prague to find them.  Finally found some at a convenience store in the subway station.

I had a Czech woman work for me for about 10 years and she did not like them. 

Said they weren't really a thing back "home".

Yeah I believe it.  I asked around when I was in Czechia and not many folks knew what I was talking about.  The ones I found were nowhere near as good as the ones here in Texico.

I found out my hometown in California is getting a raising Cane’s, which is mostly funny because for a stretch where I lived in the south, the town I was in didn’t have one. 

And some people very much wanted one.
