Not a swordfish fan.  Too dry.  Like I have said- Cobia my fav but others in too 5 are good too. 
What does snook taste like?  I have probably caught 300 of them but have never kept one. And they’re protected so you can’t sell them in a store or a restaurant down here but most people say they’re phenomenal.

I've never had snook. None of the guys I know who fish don't try for them. Locals (crackers) say they are good. Same with mullet. Never had that either.

Huh.  NYC, LA, Houston, Dallas, and Atlanta are all lower on that list than I would've expected.
