That was lunch yesterday for me, I requested the M&C with BBQ and the jalapenos and they obliged.  It was a surprisingly nice day out given how hot the north was.

It's one of the best dishes I've ever eaten.  Cheese enchiladas topped with fried egg, from the little cafe inside the Dart Bowl bowling alley in Austin.  Sadly Dart Bowl closed during the pandemic, but there's still two other places in Austin to get the almost identical dish.

I'm not a fan of yolks, but you could make something similar using a very thin omelet. Maybe?

For me part of the glory is smashing the egg and letting the yolk run all over the dish, but I get it, that some folks don't like the texture.

In fact, the dish I posted above comes with either tortillas on the side, or Texas toast, and most folks order the toast so they can sop up the eggy-chile gravy mixture at the end.

But I suppose you could go over easy and then cook until the yolk is "done" or maybe do an omelet.  Not sure, I've never had it that way.

I'm not much of an eggs-over-easy guy, but one of those over a bibimbap is terriffic.

Yup.  Bibimbap is another great use of a runny fried egg.  

You want some next-level stuff?  Reheat day-old jambalaya, fry an egg sunny side up or over easy, and top the jambalaya with it.  It's incredible.
