And you may have them in proper chili.

Here's an old school original San Antonio chili recipe, from the archives:


Ingredients:
2 lbs beef shoulder, cut into ½-inch cubes
1 lb pork shoulder, cut into ½-inch cubes
¼ cup suet
¼ cup pork fat
3 medium-sized onions, chopped
6 garlic cloves, minced
1-quart water
4 acho chiles
1 serrano chile
6 dried red chiles
1 Tablespoon comino seeds, freshly ground
2 tablespoons Mexican oregano
Salt to taste

Place lightly floured beef and pork cubes in with suet and pork fat in heavy chili pot and cook quickly, stirring often. Add onions and garlic and cook until they are tender and limp. Add water to mixture and simmer slowly while preparing chiles. Remove stems and seeds from chile and chop very finely. Grind chiles in molcajete and add oregano with salt to mixture. Simmer another 2 hours. Remove suet casing and skim off some fat. Never cook frijoles with chilies and meat. Serve as separate dish.

similar to mine.................

Fearless Phil authentic Chili:

1 1/2 cups finely minced white onion
8 garlic cloves, finely minced
2 (15 1/2-ounce) cans chicken broth, with fat removed
4 ounces tomato sauce
3/4 teaspoon garlic powder
3 tablespoons ground cumin
2 1/2 tablespoons Gebhardt chili powder
3 tablespoons Fort Worth Light chili powder
3 tablespoons California chile powder (mild)
2 tablespoons Flagstaff chile powder (medium)
1 tablespoon New Mexico chile powder (hot)
2 teaspoons salt

3 pounds tri-tip beef, cut into 3/4-inch cubes
1 tablespoon virgin olive oil
1/2 teaspoon meat tenderizer
1/2 teaspoon light brown sugar
1 teaspoon Tabasco brand pepper sauce

In a large pot simmer onion and minced garlic in 2 cups of chicken broth for 10 minutes. Add tomato sauce and all dry spices, except the tenderizer and sugar. Mix well. Brown the meat in oil using a separate pan and drain well. Sprinkle the meat with the tenderizer. Add the meat to the onion/spice mixture. Add remaining broth and simmer for 2 1/2 hours.
Mix in brown sugar and pepper sauce just before serving.

I don't use the cubed pork but obviously some recipes do.

Well, I take that back-- I do use pork, because I use about 1-1.5 lbs of pork chorizo.  I brown it to render the fat, remove the chorizo meat, then I sear my cubed beef in the remaining chorizo fat plus a little extra oil if necessary.  I reintroduce the chorizo meat once I'm adding all of the chile puree and and dry spices into the mix.

Oh, and I always serve with shredded cheddar and diced raw onions. Cornbread typically, too.
