There is a neat book out called "Salt" that goes through its history and how critical it was back in the day to nearly every aspect of life, especially the military.

Preserving food is an obvious necessity when you have hard winters.  A lot of Southern food is derived from the need for preservation without refrigeration.

Smoking meats was of course an alternative to using salt. 
Food is pretty interesting, history thereof etc.

We dined at the French place last night with our neighbor the physicist.  Good stuff.

In the South it was also a way of cooking outdoors, to keep from heating up the kitchen and consequently the entire house, in the pre-air-conditioning days.  That's another reason why BBQ is so prevalent in the South versus other places in the USA.

My granddad had a smoke house, really a shed, for smoking meat (ham).  They'd wrap the hams in a burlap kind of white cloth and hang them and smoke the place up.  He also salt cured hams as well, sometimes doing both, the result was delicious.

Back in the day, the kitchen was often a separate building because of the danger of fire, at least for larger houses.  Of course the poor lived in a one or two room "shack" and were glad to have it.  

Those folks lived lives full of work.

Smoking was prevelant everywhere as a good fire was hard to maintain(even with a smokehouse) when the cold Candadian winds come by and stuck around.So smoke as much as possible during the moderate weather when game was easily accessible

We stayed three days in Marquette, MI on the waterfront.  There was a fish smoking place just west of the motel, and they had some awesome stuff.

The wife still talks about it.  Thill's and Sons.

My brother was stationed for quite a few years at KI Sawyer AF Base as a AT Contoller.He loved it even in the winter as he had a 4 wheel drive Chevy Pick Up and made money on the side plowing during those bad winters.The base is now decommisioned but still used as a county airport I believe
