Once a year, I will go to my mom’ s southern roots ( mom was a southern gal and dad was all Italian).

I will cook up a big pan of fried potatoes, salted and peppered, and topped with ketchup.  Dayum! 

Not the greatest health meal, thus why it is once a year. 

One of the truly great breakfast sides in existence.

Down here in TN ....closer to twice a month.  :)

I sub it for hash browns/home fries most of the time. Been doing that for years.

Feels more southern to me, although I went to a French breakfast place that had roasted half tomatoes as a breakfast side and it was great.

Yeah you won't find tomatoes as a breakfast side at old fashioned places here in Central Texico, but you could see it on the menus at Euro restaurants or more modern trendy brunch places.

But that's not surprising, since Texas really isn't a "Southern" state.  Some parts of East Texas maybe, but as a whole, it's more Western. And more Mexican.
