I'd like a rule that if a team scores on the last play and is down by 1, they have to go for 2.  Everyone would know the rule and proceed accordingly.

No. I think settling for OT is fine as an underdog or underdog type. I think it was fine last night, though I did also just want more football. 

The App thing over the weekend was interesting. I thought that first one was a good going for 2. I would’ve felt less certain last night.

Your odds on 2 points are something under 40%, I think your odds in OT are 50%.  Of course, you could have a particular play for GF2 that you think is more likely than normal to work ...

And of course your odds of a 1PAT are not 100% ...

I think the two point odds are about 43.5 overall. 

The OT odds, depends on the situation. Maybe a decade back, Wisconsin and OSU played a miserable game that went to OT on a late Badgers TD. That OSU team was much better, and UW would’ve been better served, letting it ride on one play.

Glad to see you so happy.  I will note I picked Florida in our Pick Em. 
I'd be impressed if Florida beat Utah... at Utah. Gonna happen next year, which will be fun.

Out of 12 games in 2022, Florida leaves the state a whopping 3 (!) times.

Husker fans have been like that since the 1983 season

I know there is an OT tie breaker now, but before then... the coach that played for a tie was frowned upon
just seems to me that LSU's offense was playing well and had the FSU defense on their heels

I'd have went for two
but then run the risk of the call not working and it being deemed a bad call and taken the rath of the media and the fans

Not really. Clarkson start for a first down and LSU was ready to go and Florida State called the time out.
if the ref calls him down in the field of play, yes they stop the clock to move the chains, but with less than 2 seconds left it would be tough to get lined up and run a decent play.  Not enough time to spike the ball
I guess if FSU had a time out it was possible

That really is predictable as they play FSU and UGA in the state each year regardless, and Miami would be another, along with UCF/USF.  Out of 8 conference games, 5 would be played in FL each year.  And they are not famous for traveling very far OOC.
