But by all means don't go to an Italian food restaurant that has good Italian food.  You'll totally prove your point.

if I travel to Tuscany and have dinner at a little mom & pop place, how do I know that it's authentic to what was there 50 or 100 years ago?

My wife gets hung up on some French place here that isn't authentic.  I worry more about if it's good.  She's slowly coming around.  We both like a place in Decatur called Cafe d'Alsace, which as the name suggests has some teutonic influence.  There is another place Petite Violette that has a nice outdoor dining area and a really good singer on Saturday nights I can convince her to go to, on occasion.  The nearest place to us unfortunately is overpriced and not very good, Cafe Margot in the Four Seasons.  Another place opened near us recently that is "OK", I don't think they'll be around long.  We both enjoyed Atmosphere before COVID got it.  She didn't think it was "authentic", I thought it was good, owned by a French couple.  

Anyway, as I say, it can be some kind of "French fusion" and I'm OK with it.  I don't know much about real Italian foods, but I like the places we have here that are "Italian", a lot, especially La Grotta and Pasta da Pulcinella (which is owned by a Korean lady).

We'd go more often but getting reservations anywhere near 7PM is nearly impossible.

We just got back from St. Thomas. A couple good places:

Nautilus 340, which is inside an aquarium. Supposedly a fusion of French and Carribean flavors. I don't know anything about that, but it was pretty good and an absolute beautiful setting over the water near Coki beach.

For authentic, we went to Last Lap, which was within walking distance of our hotel. Just basically a house with a bunch of tables outside. The national dish of the virgin Islands is fish and fungi, though the fungi is actually corn meal and okra. Didn't really love that. Did love the fish, which was served whole and covered in something delicious. The oxtail was pretty great, too.

I don't want authentic, I want good. 

Now don't get me wrong, old-timey authentic stuff is cleaner and simpler, but it's sort of akin to going to a medicine man when you're sick.  Why ignore the last number of decades of advancement in the culinary field?

I'm sure the pizza you get in rural Italy is great for what it is, but it's still only got like 4 dabs of cheese and some leaves on it.  I'll take Domino's over that any day.  Not because I'm a slob, but because it tastes better smothered in cheese and sprinkled with meats, etc.

Domino's is authentic American fast food pizza chain pizza.

We enjoyed the pizzas in Naples but I prefer pizza from Chicago (thin) or New York. More cheese and toppings, less (or no) crust.

Rome was just OK. My wife liked it, but she's a bread person. They do have a crispy version that I probably would like.

I don't bother eating pizza in Italy.  They have so many other, better dishes.
