OK, you can envision a simple tax code, you just can't envision making it happen

Yeah, I think it would be massively disruptive to go to no deductions.  Is it possible over time?  Maybe.  Will it ever happen?  Nope.

The tax code is how Congress gets "us" to do stuff they want us to do, same with corporations.

a flatter simpler tax like a large sales tax

buy a fancy automobile, a big ass boat, a huge house on 45 acres, a steak dinner & drinks at the most fancy place in the city, tickets to the symphony or the opera
heck, buy a $9000 humidor and fill it with $40 cigars, or fill your wine cellar with the good stuff

Pay the tax
This too would be rightly viewed as regressive because the poor obviously spend a MUCH larger percentage of their income on necessities.

Well . . .
Depends on what state you're in.
And this is where the complications start creeping back in.

In Ohio unprepared foods (think groceries) do NOT have sales tax but prepared foods (think restaurant) DO have sales tax.  Then there end up needing to be all kinds of regulations on what constitutes prepared vs unprepared.

Yep. Groceries are exempt here, but restaurants tax 6% on the bill.

My sales tax here is 8.9%, it's 6% on groceries.

State income tax is a bit over 5% and flat, everyone pays the same rate.

This is one reason we go to the Costco up in Cobb county.

The lottery is a tax on people who are bad at math.
