What is the rationale behind vaccine or EV mandates (or or or)?

If you get them, great. If you don't, you can't work. Great.

Why make lab-created meat, when you have readily available livestock? Oh, I know.

Climate.

If you can't afford lab meat, great. Eat bugs.

A mandate and a ban are both the same thing--government stopping someone from making a personal choice based on their preferences. 

I don't understand why Florida is taking away their citizens' right to make choices about what food they eat.

To grow meat in a lab, you have to provide amino acids and sugars etc.  AAs are not cheap at all.  The cheapest source might be chickens or fish.  So, you take a chicken and extract amino acids and purify them and feed a bioreactor and make ………..  chicken.
