so, what the heck do the French eat if beef is not good and there's no chicken or pork?  Seafood for all???

A lot of fish and seafood, but also duck and lamb, rabbit and veal.  If you see pork or chicken on the menu of a US French-style restaurant, it's been Americanized, which is not always bad.  Our local French place menu is below.  This is somewhat Americanized but still mostly real French.  (The owners are French.)  It's a nice place, we think, and a bit hidden so it's not massively over priced.  People go there for the atmosphere.

The term "entree" in French is the appetizer, the ENTRY to the meal.  Julia Childs I'm told changed this somehow.

The other confusing thing is seeing the term "menu" at a place like McDonalds, which in that context means "Combo meal".  Bistros will have "menu items" which are 2-3 course meals.

I'd be ok, I enjoy duck and lamb, rabbit and veal.  As you know, some "Americans" would need to do some adjusting of thoughts.

I enjoy French places and the good food.  Especially the sauces.

Thanks, Fearless.  Best part of having my son here is that we have not seen him for ten years after he moved to Alaska (except for my father's funeral in 2011).  Thank goodness for Facebook or I wouldn't have recognized him when I picked him up at the airport, lol. I'll be sad to see him leave when he finds his own place to live; just glad he will be in the same city for a change.  

Thank you for the blessing on my mom.  It's hard to see her fading away with heart troubles and Alzheimer's.  She will be 90 years old next year so we are glad we've had her this long. 

Gotta blame something on the poor season, lol.  Might as well be me.

Happy Thanksgiving everybody!

Preliminary dinner at sister’s last night. Next up another dinner with Dad out in the country at a longtime family friend’s who are more than glad to host us given how a few of their grown children can’t make the trip back to the nest this year. Heading out to visit Mom’s grave before buying some spiked eggnog and heading over. Even though it’s Arizona, pretty cold and rainy all week.

The only non-traditional thing on the menu today is a filet mignon for my wife...

...but that's because she's allergic to poultry. She's still roasting a 13# turkey for the rest of us lol.

With today's weather, I might sous vide the filet and then sear it in cast iron. It's pouring.

I did sous vide the whole beef tenderloin tonight.  Damn, it was good.   Port wine sauce with it.
We did have gravy for the turkey breast I put on the BGE.
Nice Egg Bowl tonight.

FYI, the Costco turkey was delicious, probably the best I've ever had.  It came as a package, a large breast with taters and beans (which were not good) and cranberry and stuffing for $26.52.  The wife really liked it.  I was semi-amazed.

The new stove has a temperature probe in the oven which is nice to have.

When I was a kid, we'd eat around 4 PM.  There was some distinction between "supper" and "dinner", but now I don't recall the difference.  It was an odd time to have a large repast, I think we barely had lunch or ate a late breakfast.  I probably didn't get out of bed until noon anyway.

I think we always had turkey, and ham for Christmas (I suppose to prove we weren't Jewish or something?).

We only ate beef, chicken, or pork at home 99% of the time.  In France, I've never seen pork on the menu (outside Alsace), and rarely see chicken at restaurants.  Their beef is not good in my experience.  My step son makes a huge dinner over there and invites about 30 neighbors.  I went with him the year before to get the turkeys, they were 80 euros each, he had to order them.  It's not a holiday over there of course.
"Supper" once meant the evening meal, while "dinner" meant the largest meal of the day, whether it was served at noontime or in the evening.
Supposedly, WWII was the beginning of the end of this usage, as the U.S. military called meals "breakfast," "lunch," and "dinner," and the GI's came home from the war with that understanding.

No, raw.  Cooked about hour and a half.  Used probe.

We were impressed.
