One way to think about this subjectively is to ask "If the player were replaced with a reasonably competent but average rusher, how many more losses would the team have had?".

I figure the 1980 Dawgs were an 8-4 kind of team without #34.

Emmit didn't really have a great college career relatively, did he?

Emmitt's Florida career was similar to Bo Jackson's final 3 years, minus the Heisman.  He had a breakout FR season, missed some games as a SOPH due to injury, then a good JR season.

Yr 2 - 1,213 yds & 12 TD
Yr 3 - 475 yds & 5 TD
Yr 4 - 1,786 yds & 17 TD

Emmitt
Yr 1 - 1,341 yds & 13 TD
Yr 2 - 988 yds & 9 TD
Yr 3 - 1,599 yds & 14 TD

Emmitt left as Florida's all-time leading rusher in a career, single-season, and single-game.  He still owns the latter two records and it took a 4-year career for the only RB to pass him on the career yardage list (Errict Rhett).  He was pretty good.

Chuck Webb was one of the all-time greats at running back, but he'll never show up as he blew his knee the second game of his sophomore season and never played again.  But he was a great one.

Should be 50 more backs on the list before him.  

Would you take him over Jamal Lewis, or Travis Henry?

If you leave out Billy Cannon a Heisman Trophy winner along with George Cafego and Johnny Majors both Heisman candidates you don't know much about SEC football just what you've seen in your life time.

One could even go back to Frank Sinkwich, also a Heisman winner, but most folks wouldn't.  Charlie Trippi was runner up, and maybe he should get some consideration.

Johnny Majors' running stats are pretty, well, more typical of a QB ...
