Well if you're trying to convince us with something we've apparently never had, you should at least provide a recipe. 

We're doing Steaksgiving on Friday since the kids are at their mom's house tomorrow, and we aren't doing our grocery shopping until Friday morning. 

So I still have time to potentially pivot on the menu and try it out properly. 

(Hopefully it uses fewer chilis than your enchilada sauce, or nobody but me will be able to eat it.)

Ha!  That enchilada gravy isn't even spicy, just flavorful. :)

I do not have the recipe to my mom's homemade cornbread dressing. It was her mother's, my grandmother's recipe, and hopefully she'll write it down for me someday, while she still can.

Not liking cornbread is really weird.  It's delicious as an ingredient in dressing, and it's also fantastic with chili.

Ya corn bread has never been requested,pumpkin pie on the other hand is in the oven as I type. I'm sure 94's mom could win a Blue Ribbon at the county fair but not my go to.

true, not liking cornbread is silly

it's delicious in it's own right - especially smothered in gravy

but, it's just bread, nothing to put on a pedestal

I had never had cornbread, but somehow my wife's Italian-Irish Pittsburgh family serves it with every chili/stew/sauce.  It's amazing.  I hate my FIL's chili, but the cornbread is the thing that makes it tolerable.

I will admit though, that this conversation has been enlightening to me, because I really had no idea how regional cornbread is.
