My grandma made cornbread regularly here in NW Iowa

Sad yankees.  I feel bad for you all.
I dunno. You are bemoaning the plight of Yankees.

But you're telling us about a dish that might be one of one. You can't provide a recipe. Apparently nobody outside your bloodline knows how to make it. You don't even know how to make it.

As far as I can tell, you should feel bad for your next door neighbor just as much as you do us "sad Yankees", since it's not clear to me that your neighbor knows how life-changing this dish is. Maybe your neighbors have had cornbread dressing, but maybe it's not even remotely close to as good as the one your mom makes.

If you really feel bad for us, get your mom to write it down, and pay it forward. Enlighten us! :57:

Not liking cornbread is really weird.  It's delicious as an ingredient in dressing, and it's also fantastic with chili.
Ad mentioned we're doing Steaksgiving. Filet.

Step-MIL was in charge of bread/rolls. She just asked " can I bring cornbread?"

Ugh, with filet mignon??

Eh. I make Ina Garten's stuffing when I make stuffing. It's good, but it doesn't make the meal.

Green bean casserole makes the meal. Especially since my MIL has tweaked the recipe to make it much better than the "standard" green bean casserole, which was already delicious.

What makes the meal is cranberry relish and mu grandma's turkey gravy (which i can't get anymore since grandma is dead and No one else seems to be able to duplicate).

Love cornbread but prefer the not so sweey version.   Love to put if in a bowl and put chili over it.  Or just cornbread with butter

My mom will put crumbled cornbread into a large glass of milk and spoon it out.  Even better if she has buttermilk around.  It's weird to me, I think it's an old-timey deep South thing.

I will admit though, that this conversation has been enlightening to me, because I really had no idea how regional cornbread is.

Stovetop = processed food.

I don't think it's possible to make unprocessed stuffing by definition.
