Crap, just realized the recipes I see for gumbo not only have chicken, they also have shrimp. Fine it it's just for my wife and I, but the middle child has a shellfish allergy.

How much modification is too much before it's no longer "gumbo" lol?

I'm not sure, though I think gumbo is more about the sauce than the protein. Be a real cajun and use rabbit you shot in your backyard. Or some swamp frogs.

Yeah you can just make straight up sausage gumbo.  In Louisiana,  Andouille sausage is the most common, but I think you could use just about anything.

I bet true cajuns would use nutria.  If you've never heard of nutria, look it up.  Mmmm mmm good eats.

Like I said, you can pretty much do whatever you want, but I tend to keep chicken/sausage and shrimp separated.  That's by common usage around here, and thus acquired preference, but not a rule you need to follow.  In my mind there's chicken and sausage gumbo (or turkey and sausage in my case), and there's okra gumbos, which I should probably call seafood gumbos because that's what most people would call what I'm thinking of.  Those tend to have shrimp.  And okra, if there's going to be okra.  In my opinion, one doesn't really go with the other, but as I say, that's just me, and if it floats your boat, it's not wrong.  In general I like different roux with each of those, and that's probably why I don't want to mix them.  I like a thinner roux in seafood gumbo.  Chicken/turkey/sausage...I like a very thick roux.  But, mix in shrimp with the chicken and sausage, if you like.  Nobody from the Boot is judging you.  

I feel like if its got rice and roux, you're only wrong if you don't like it.

I had some gumbo at a waterside restaurant in Destin last weekend. It was right tasty.
