We have Canes around here.  Nobody lines up for it. Chick fil A, on the other hand-- lines all the way out the parking lot, down the access road, and onto the freeway, at noon or 6.

I love Reubens, too.

I usually only eat turkey at thanksgiving

Oh man, you're missing out.  Smoked turkey is a truly wonderful item and it's delicious year-round.  Seriously underrated BBQ protein.

I love turkey in general, and smoked turkey is amazing and one of life's great pleasures.

Looking forward to smoking some turkey when my smoker gets here :)


In my family, we typically do turkey and sausage gumbo, instead of chicken and sausage.  Not that I'm downplaying chicken and sausage gumbo in any way.  I love it, most people do chicken, and it's really great.  I just happen to prefer my grandmother's recipe, who also prefers turkey over chicken in her gumbo.

I think gumbo is the next dish I'm going to try to perfect.  I've made it a few times, using various recipes of questionable authenticity.  It's always turned out decent, but I think I'd like to put some focus on it and see if I can bring it up to my same standard for BBQ, enchiladas, and chili.

My kids ar too young for coffee so Starbucks isn't a thing for them yet. Chick fil A was pretty heavy in the rotation when the kids were younger because they were a bit picky and it was something quick that would make them happy.  It was typically a quick-grab-after-soccer-practice kind of meal, when we didn't have time or energy to cook at home.  We rarely go there anymore though, maybe if we're out shopping and we need to grab lunch while we're out.  I'll admit I really love their spicy chicken biscuit.

But the other day my 16yo daughter said something that made me really happy and proud as a parent.  She said, "You know, I really love that we almost always have home-cooked meals for dinner.  It's so much better than restaurant food."  That was a true warm fuzzy moment.

We really try to make sure that on week-nights at least, we have home-cooked meals, and we sit down at the table and eat together.  It's become a little more different with the kids at different schools and their schedules diverging, but next year when they're both at the high school and they're both doing marching band as their primary extracurricular, it's going to get a little easier again.

IMO, one of the great things about gumbo is that by definition, there's a lot of leeway.  Go to 5 different coonass's house and eat their gumbo, and you'll get 5 different versions.  I guess I'd categorize into two basic types, the turkey/chicken & sausage kind, and the okra kind.  Past that, you can kind of do whatever you want, so long as it's in roux and over rice.  Some folks like a lighter, thicker roux, and some like a darker, thinner roux, and all points in between have a fan, somewhere.  You can make your own roux, or there's good storebought pre-made roux.  You can spice the hell out of it (my mom does this, it's not really for me) or you can tone it way down (my great-grandmother, full-Cajun, swore that real Cajun food was not spicy, contrary to popular belief).  Whatever other ingredients you think match and you want to throw in there, it's mostly allowed.  

Point is, I don't think I've ever known two people who did it the same*, so as long as you like it, I believe I can speak for the Cajuns and give you the official Corrupt Louisiana Stamp of Approval.  The real trick is, can you make it outside in a small vat on a cold day for friends and family, to be the winter version of a crawfish boil?  When the answer is yes, you have achieved Maximum Honorary Cajun.  

*Well....except for Mrs. DeTiger, who has adjusted her recipe some to be more like my grandma's, because she's knows it's my fave.

Yeah in general I know I prefer the darker roux.

And I've never thought of Cajun food as being particularly spicy. I mean, you can throw Tobasco or Crystal on anything to spice it up, but I honestly prefer NOT to add those types of hot sauces to a soup or stew, because they're so vinegary they dramatically change the flavor of whatever you're putting them on.  

I like to put hot sauces on sandwiches though.  The vinegar is welcome in that setting.

Well sure.  I put a little cayenne in my chili.

But in general the Cajun food I've had in my life, both in the state of Louisiana, in its bastard sister-city of Houston, and here in the ATX, isn't particularly spicy.  There's always a bottle of Tobasco or Crystal or Louisiana Hot Sauce on the table, which folks tend to use to add some heat.  But that's  not my thing.

I doubt I will ever reach this mystical status, but if I can make a consistent pot that doesn't scream "n00b!" then I'll be happy.

Hmm... Gumbo could be a fun one to try. That's one that my wife probably can't eat in a restaurant due to her poultry allergy, but if I could make it at home with some substitution, it could open up a whole new thing to add to the rotation. I'd bet the kids would be fans too.

Yep. And I think for my kids, they get to experience this as a SERIOUS contrast between what we do at our house and what their mom does at hers. First thing they do when they come to my house is look at the menu up on the wall. Hell, I'm not even sure they like me, but they certainly like the food over here!

Usually for their birthdays, we ask them if they want to go out to dinner or have us cook--and they choose our cooking.

Crap, just realized the recipes I see for gumbo not only have chicken, they also have shrimp. Fine it it's just for my wife and I, but the middle child has a shellfish allergy. 

How much modification is too much before it's no longer "gumbo" lol?
