Clearly he hasn't had Walleye/Perch fresh from the Great Lakes.Can't eff up perfection......well maybe i could but not so far
Speaking of fish tacos - my dad used to drag me walleye fishing, and would usually fry up the fish in bisquik and wrap it in a tortilla. I should put him on wikipedia.

I think of Chicago and deep dish as synonymous, Philly and cheese steak, etc., I realize some of these are not authentic but generated.

SF I think of Chinatown, or Pier 37, which was commercialized to a touristy death zone for me.  LA, maybe CalMex?  Memphis and ribs.  NO and all sorts of French things, I'm not a fan.  Miami and stone crab.

Cincy, have you had etouffee?  Less soupy than gumbo....less all-over-the-place than jumbalaya.  I love cajun/creole fare and prefer etouffee because it's a middle-ground dish.

I have, of course, had all of those.  We spent three nights in NO and dined around, nothing impressed me at all.  We were being taken places by a lady who claimed she knew the good places, she didn't, in my view.

I suppose I'm a French snob when it comes to food, I'd rather have French than some kind of quasi-pseudo-semi-kind of French something.  Fish stew to me is just fish stew, it can certainly be decent and tasty but hardly elevating, to me.

I fix jambalaya on occasion at home when we have the fixin's and it's fine, I fix beef stew with leftover steak and it's often fairly good, but it's just food to me.  I like okra a lot so I fix soup with it fairly often when it's chilly.

To me there is kind of fast food, then regular food, and then rarely memorable food.  Regular food can be quite good, but not memorable.

Some of my memorable dinners was as a kid eating at my grandma's table because everything was just picked.

Funeral Potatoes, Fry Sauce, Pastrami Burgers and Navajo Tacos.
Never heard of that but I can't recall eating at the after Funeral Receptions - just don't have appetite.Couple cups of Joe and make the rounds,maybe a few shots out of respect

Business booming at Waffle House after LA sports columnist’s tweet – WSB-TV Channel 2 - Atlanta (wsbtv.com)

I'm now thinking this is Atlanta's contribution to the culinary world.  The "Battery" around the stadium is of course new, I suppose it's "sterile" in that sense.  I'm not sure what else it's supposed to be really.

The tweet from LA Times sports columnist Bill Plaschke said, “After the five-game madness against the Giants, this NLCS Game One in sterile shopping-mall Atlanta stadium feels like a Saturday night in May..most excitement is discussion of post-game trip to Waffle House.”

The Waffle House cooks have a fascinating way to recall orders yelled in by the waitresses.  The food of course is comprised of salt, grease, caffeine, sugar, but no alcohol, so they missed on major food group.  My wife is not a fan.

I have like, four good hours of fishing in me a year. We would go on these week long trips where we'd fish all day long. Pretty sure I could go several lifetimes without fishing again

I'd never had walleye til I spent some time in Minnesota.  It's delicious.

Chili just a knock off mole. Which I mean to make one of these days. I've been put off by the nuts, because one daughter is allergic.

I wish someone would do a detailed BBQ map.  Not just the lazy Carolina style, Texas brisket, Stl Louis ribs....but a genuine, accurate map with zones within zones.
I swear East-Central GA pork BBQ is unique.....so I assume everywhere else's is, too.
You're definitely correct that there are sub-regional differences in all the major BBQ areas.  A comprehensive map would be cool.

I think the major differences are worth knowing, I'm not sure I'd bother with minor subdifferences.

I got used to eastern Carolina BBQ and grew to like it quite a bit, it looks pretty nasty, kind of greyish shredded pork.  It was like the first time I had Cincy chili, it was weird.
