I was going to make this a poll, but there are too many legit options.
I was going to list 1 per decade, but that got messy.  Here's a list to help, though:

What do you count? I feel like just about every team has to claim one. Like a 1917 billingsley national championship or something

The real ones (AP, UPI/Coaches, BCS, CFP).  Consensus.  Not computers or time-travelers.

1981 UGA was perhaps their best team ever compared to the others.

Making title game but losing: ‘95 Florida, ‘02 Canes, ‘05 USC, ‘99 Virginia Tech

Missing title game: ‘98 Kansas St, ‘96 & ‘98 Ohio State, ‘99 Wisconsin, ‘95, ‘96 & ‘97 Tennessee, ‘02 Georgia, ‘04 Auburn, ‘08 USC

Edit: Was putting together my list and it struck me how all the good teams coming to mind were teams I watched from 10-20 yrs old, not much after.

And I’ll say it - is the 1996 Citrus Bowl between Tennessee and Ohio State one of the most underrated college football games ever? In terms of star power and team quality? I could easily see both of those teams finishing #1 & #2 over the last few years run of Clemson Vs Ohio State Vs Alabama NC games we’ve been getting.

I was at this game in Lincoln 1982...............

Nebraska’s high-powered offense broke four NCAA single-game records as the Huskers swept to a 68-0 whitewashing of outmanned New Mexico State.

Before the final gun sounded, Nebraska had gained 883 yards of total offense to break the NCAA mark of 875 set by Oklahoma vs. Colorado in 1980, picked up 677 rushing yards without a loss to top the old mark of 645 by Texas-El Paso vs. New Mexico State in 1948, recorded 36 first downs rushing to break the old record of 35 by Colorado vs. Northwestern in 1978, and rolled up 43 first downs to snap its own record of 42 set against Colorado the previous season.
