Baseball is the sport with the least variance between best and worst in a 1-game situation. A postseason tournament is a series of 1-game situations.
The very best college football teams win 90-100% of their games in a season.
NFL - 80-85%
NBA - 75%
MLB - 60-65%
college baseball - 75%, but with 10-15 games to start the year vs cannon fodder + midweek games, that is inflated
There is a lot of luck in the outcome of baseball games, built into the game itself. So these elimination games in college baseball reveal VERY little in terms of who is best.
Like MLB's postseason, basically it's a dice roll, with each team getting a face of the die. You can't will yourself to victory in a 1-game sample size very well (or even in a short series).
That's why MLB has a different WS champion every year.
