I've driven a Ferraro Scuderia on a race track and a Cadillac CTS-V on a track in Austin (an F-1 track). The latter was more thrilling, int part because the track is a lot longer than the one in Vegas where I drove five laps. The CTS-V makes nice noises when floored.

A nice way to see Paris is to rent a driver in a Mercedes, I think it's about 500 Euros a day. You don't have to worry about parking. I actually don't like being in Paris much. We were there for a day last trip, had a driver so I could relax in the car, wasn't thrilled about anything. The ladies wanted to shop and have lunch, which is where the caviar came into play.
