I fix a version of jambalaya on occasion.  I haven't in a while.  I have to "down spice" it for my wife.

Now I'm thinking about buying an electric smoker for the deck.  Probably not, but maybe.  I have a small Weber electric grill the previous owners left, it works pretty well.

The other day I brought leftover gumbo to work for lunch, but overnight the rice drank all the roux.  So I called it "gumbalaya."

I would guess you can set it on low and get some wood chips for smoke

As my parents have gotten older, we've started alternating hosting Thanksgiving among my family.  My brother, sister, parents, and me. 

So this year I'm hosting and it looks like we're going to have about 25 folks.  As always my dad will fry a turkey, and I'll smoke one.  But I think we might need something more.  

Here's a pic of what I did a few years back, that's a spatchcock BBQ'd turkey, and a BBQ'd duck as well.  Man it was so tasty.

I'll go back and read this whole thing later.

I usually try to plan my one day 14 hour trip to visit my daughter in Baton Rouge to eat at Scholl Bros BBQ in Paris.  Nothing in NE Texas made the list last time I looked.  It's pretty good, better than Whataburger or some other chain along the side of the road.

I like going to Tulsa and taking the Indian Nations turnpike instead of having to deal with OKC and Dallas, and it's about 70 miles shorter.
