From an Iowa article on Fansided...
You pick a QB, RB, WR/TE, 1 OL, 1 DL, LB, DB for your 7 on 7 team.
There'd be some playing both ways, so overall athleticism matters.
You might want a running QB, if possible.
Your RB should be a good pass-catcher, not just blindly the best rushing RB of all-time.

Florida:
QB - Tebow
RB - options here - Rhett and John L Williams were great pass-catchers, Emmitt was just great, but I'd probably go with the speed of Fred Taylor
WR/TE - Percy Harvin - could carry the ball, too.  Or Harvin at RB and Hilliard or Gaffney at WR?  Fun.
OL - Jason Odom
DL - for basically pure pass-rush, Alex Brown
LB - Jevon Kearse - not the most productive college career, but the Freak would be on display in this setup
DB - Reggie Nelson - the Eraser would clean up in the back end.  Lawrence Wright could light people up and be like a 2nd LB, but 7-on-7 drills are mostly passing.

If I may, for Northwestern:
QB - Zak Kustok - was one of their better passers and could run...could go with Basanez or Otto Graham here, I guess.
RB - Tyrell Sutton - 3rd leading rusher all-time for NU and 10th in receiving yds
WR/TE - D'Wayne Bates
OL - Chris Hinton
DL - Casey Dailey - single-season and career sack leader
LB - Pat Fitzgerald - not the layup many would think, the NCAA's all-time career tackles leader was a NU LB:  McGarigle
DB - Sherrick McManus - 1st team All-Big 10, still in the NFL

RB- Steve Slaton

WR- Tavon Austin (He would be a 7 on 7 Hall of Famer).

OL- Dan Mozes 

DL- Bruce Irvin

Yeah, with either QB and that speed/agility in space, WV's offense wouldn't be fair.

This format is weird. 

QB -Wilson 
RB - Proably Taylor, maybe Melvin Gordon 
WR - I guess Evans, though Nick Toon or Abby could make a case 
TE - Lance Kendricks because he’s physical, through Taravis Beckum started as a four-star DE
OL - Joe Thomas, who tore his ACL as a junior playing defense in the bowl because injuries ruined the DL
DL - JJ Watt. 
LB - I think Borland. Though the recent run at the position might have me forgetting someone 
DB - Troy Vincent

RB - Ty Wheatley
WR - Braylon Edwards
TE - Jake Butt
OL - Jake Long

this is just saban guys, but most have a strong argument for all time.

qb - tua - best bama qb ever, and can move pretty well.
rb - jacobs - best pass catching rb from bama i've seen. also top notch rb.
wr - julio - goat wr for bama. 
ol - jonah williams - mostly recency bias, but he can hold his own vs just about anyone. wouldn't argue with a number of other players here.
dl - quennen williams - big and strong enough to go through people 1 on 1, and quick enough to move around them too. there's probably better dline at their position than q, but he's best for this task, imo.
lb - mosley - most instinctual lb we've had, plus blazing speed and great coverage for a lb
db - minkah - can cover 1v1 with anyone, can come up and deliver a big hit. maybe best bama db all time.
