If you have time?  Sure.  6 hours on the smoke would be plenty.  I also like to make sure I get a really nice bark in my chop, so you have some different textures once it's all mixed up.

Sure hope so but gotta take care of business in the B12 CCG first.

Oh and pho is absolutely fantastic.  By far my favorite of any of the Asian soups.  I like it WAY better than ramen, for example.

I can't get 6. It's in the oven now after 3.5 hours of smoke, at 250 or so. Got a nice bark.

How long in the oven? I put in some liquid (beef stock) so it won't dry out.

Foil/butcher paper is your friend for pushing cook time along.  Butcher paper preferred

Until it's done. Can't use time, or even temp. Cook until it's tender.

Best thing is to test with an instant read thermometer probe. Poke it around in multiple spots. If it resists, it's not ready. If it goes in wo resistance, it's tender.

Lots of rain here in Tucson this morning. Sun just starting to show. Family friends taking me to Tempe for the Territorial Cup today. We’ll be a mixed group of 8 of us Wildcats Sun Devils walking into stadium.
