I've heard that the food in "Chinatowns" now is almost all "for tourists".  My stepson didn't want to dine there in SF at all.  We went to another place near where he lives that was solid, comparable to places here I thought.  His GF is from Hong Kong, I've taken her to a couple places here she really liked, but she tries to be super nice (and is).

The local place I like my wife doesn't much, which means I don't get there very often.  It might be because it's "authentic", everyone working is Chinese as are most of the patrons.  I think it's terrific.

URBAN HAI

As for "authentic", I never quite know if ethnic food really is, my wife says the French food here is almost never like in France.  Our chef friend said the ingredients are different so he has to improvise.  She usually agrees to try them and likes them OK even so, but it takes a few visits for her to get over it.

I suppose it's akin to my having grits and fried Okra in the UP (which never would happen).

This may have been more “authentic,” and if so, they can keep it. Or maybe it just sucked. Either way, I won’t be going back there.

of course, I've never heard anything about Philly’s Chinatown - didn't know that they had one

That's something an abandoned six year old would make on day 4 of being alone.

I've harped on this before, but most Chinese food in America isn't actually Chinese food... It's American Chinese food.

https://en.wikipedia.org/wiki/American_Chinese_cuisine#Differences_from_other_regional_cuisines_in_China

Quote
Ming Tsai, chef and former owner of the Blue Ginger restaurant in Wellesley, Massachusetts, and host of PBS culinary show Simply Ming, has commented on the characteristics of American Chinese restaurants. He noted that these establishments often serve dishes representing three to five regions of China simultaneously, typically including items such as chop suey, various sweet and sour dishes, and an adaptation of chow mein or fried rice. Tsai described this style as: "Chinese-American cuisine as an adaptation of traditional Chinese food, modified to attract American customers by making it blander, thicker, and sweeter".[33]
As I've also said, Chinese food is very regional, in many ways like Italian cuisine. I personally gravitate toward the more bold and spicy flavors of Sichuan or Hunan cuisine--which is the exact opposite of most American Chinese food--thick sweet sauces.

Had a cheesesteak from Angelo's in Philly today. It was good. It wasn't life changing, but it was good.
