I mean, I'm not gonna say California isn't a little bit weird...

But if you're gonna make some weird crap that is "Cali style", at least make it something that I'd ever seen on a menu, or even heard of as a concept. 

We have enough weird stuff that you don't have to make new stuff up. Adding guacamole to something doesn't immediately make it "Cali style".

Amusingly, down here in Texico, it's not uncommon to find the option to add guacamole and/or taco meat and/or chorizo to your chile con queso.  But nobody calls it "California-style."  Some places might call it "loaded" or something similar.

Personally I don't much care for quac and have no desire to see it in my queso.  Taco meat and chorizo, on the other hand, are tasty additions.

I'll eat guac if it shows up on top of nachos or something. I'm not one to sit and dip chips in the stuff, by itself.

I can definitely see meat... That makes perfect sense.

I'm a big fan of queso fundido, which is a melted cheese commonly with chorizo. Although times I've had it, it's not really a "dippable" cheese sauce; the consistency is such that it's served with soft flour tortillas. 

I love guac, but I don't want it in my nacho cheese sauce. 

I should point out that dippable cheese sauces for tortilla chips are another thing we don't really see much here in CA.

"Dippable cheese sauce" is chile con queso.  It's a staple here.  It is not "nacho cheese sauce" because proper nachos have beans and melted shredded cheese on them, plus maybe some meat and jalapenos and pickled onions and whatnot.  Stadium nachos are fine for what they are, but they should never be confused with real nachos, any more than Taco Bell should be confused with real Mexican food.

Queso fundido is also common, but more of an interior Mexican food item rather than Tex-Mex.  Still, tons of places have it.  I like it but indeed, you have to either spoon it, or even cut it with fork or knife, to get it onto your tortilla.

Not a big Mexican population here in FL - about 3% or so. Cuban is 7% and PR is 6%.

Not a big fan of PR and Cuban foods, but I love Mexican. Not easy to find in these parts, but we have a couple of go-to places.

I despise plantains.

Yup I don't get it, at all.  Guacamole already has its own texture challenges, no need to dump it into a bowl of perfectly good queso.

We don't have much Cuban here, although I've been to this place maybe 3 times: https://www.restauranthabana.com/habana-the-lab

I will say that a good Cuban sandwich is pretty effin' delicious.
