Lots of people refer to a grill as a BBQ. The same people say they are throwing a BBQ. Dogs and burgers! BYOB!

Words are used to transmit ideas from person to person. And as such, context matters. 

"Hey man, I'm hosting a BBQ Saturday, wanna swing by?" can carry a different meaning than "Hey man, wanna come by for dinner Saturday? I'm serving BBQ." In the former, I'm probably expecting burgers & dogs, in the latter, I'm expecting a more traditional BBQ dish. 

That New Orleans dish can be called "BBQ Shrimp" which conveys meaning to anyone from or familiar with NOLA who will understand what that nomenclature means, while still not "being" BBQ.

The dictionary does not define a word, context does.  When I use to teach Biblical exegesis, I would use the example of the word ball.  I would ask what was the meaning of the word?  I would get different answers.  A round cylindrical item, A good time, A formal Dance, etc.  Then I would explain that the only thing that gave the word meaning and understanding is the context.  We have to understand the context to understanding the meaning.

True Texas BBQ is done using a PIT burning wood (hickory etc) with a rotating rack using a rub and some other things

and again you can use any meat
