Mostly unrelated, but I used to live in a town that had a Texas-style barbecue truck pop-up. The guy who owned it spent a lot of time going down to Texas to learn the craft. Did some really good stuff.

after about seven years, get established a really nice little business. Someone convinced Vaughn to drop by on a swing through the south. The man came away saying good things, and oh man it was nice to see that. Just to see the reaction from the owner, who is a great guy

What was that place? (I swear, I’ve actually had pretty good barbecue in New York City. But I think everyone who did the work there learned in Texas)
I don't remember the name of the place, it was probably around 2006, 2007, when I was traveling to the Bay Area most often.  The joint was somewhere between San Jose and Palo Alto.  And it was legitimately quite good, not just "good for being in California." ;)

I’ll have to look into that. The last Texas style place I went in California was just a horrendous dud. There was a really well regarded place in Oakland, and I was going to try it over Thanksgiving. But then they had a fire and might be in debt up to their eyeballs, so I’m not sure how much longer that will last

Many, many cultures have traditions of low & slow cooked meats, and lots of them are VERY delicious. But I thought we were primarily discussing traditional American southern BBQ. 

Hawaii doesn't do that, which doesn't mean it's not delicious and wonderful, but it's a different discussion.

I have not... Until now. Looked up a recipe and looks delicious. 

But it ain't BBQ.
