Bouillabaisse, the traditional fish soup | Marseille Tourism (marseille-tourisme.com)

Brown the onion, garlic and tomatoes over a high heat in olive oil. Add the soup fish, cleaned and cut up, and stir to obtain a paste-like consistency (about 15 minutes). Add boiling water and leave to boil for at least 1 hour.
Add fennel and parsley, salt and pepper. Pass through a food mill, then through a sieve, without forgetting to press the bottom so that the juice runs out.
Add the raw potatoes cut into large slices (2 slices per person), then the fish according to their size and the firmness of their flesh (scorpion fish, Saint-Pierre, fielas, anglerfish).
Boil for 20 minutes. 5 minutes before serving, add the galinettes and the spiders.
Once cooked, remove the fish and potatoes, add salt and pepper, saffron and arrange on serving dishes.
The usual recipe is based on aïoli to which saffron and hot pepper are added.

Another recipe can be made with potatoes and chilli.

Some restaurants have signed the ‘Bouillabaisse charter’ created in 1980 by certain restaurateurs to define the basic ingredients and presentation of this dish in order to ensure its quality. Indeed, this charter was invented because some unscrupulous restaurateurs were using the name ‘bouillabaisse’ to serve any fish soup. Nevertheless, there are some restaurateurs who serve it in the rules of the art, but they did not wish to subscribe to this charter.

Be sure to pound gallons of bouillabaisse whilst in Marseille.  Man I love that stuff.

 

I like it too, but never had it in Marseille.

Honestly, I prefer cioppino.

It's the Chicagoan in you.

Both are tasty but there's nothing like bouillabaisse in Marseille. 

And much as I love Bordeaux, the local rose' wines from provence are the ultimate pairing for that dish.

I've never been to mainland France. Not sure if I will, but if I do, Provence it is.

Sure but its origins are in Liguria. You Chicagoans love your Italian food.

And I have to say that the Ligurian fisherman's stew I had at a small seaside restaurant in Riomaggiore, Cinque Terre, is among the best dishes I've ever had in all my trips to Europe.

I'd like to try to make some seafood dishes with fresh Gulf fare, but I'm told Texas is landlocked, so what are you gonna do?

There are differences, and there are similarities, of course.

Italian food in NY or Chicago is still based on Italian food from Italy.

And American-Italian is more like Italy-Italian than it is like French or German or Moroccan or Vietnamese food.

I think Chicago has a certain Italian culture, just like pretty much any big city that took in a lot of immigrants around the turn of the 20th century. Not sure that we consider it a "core" identity the way that the NY/NJ or Boston areas do. But yeah, there were a lot of Italians in Chicago and it certainly is part of Chicago's very rich food and cultural scene. And Chicagoans love food, and Italians love food, so there is that commonality :72:

Definitely a strong contrast to nearly anywhere in the South or west of the Mississippi.

Lots of Italian food down here. 

There are a lot of Boston, Detroit, Philly, New York and Chicago people here too, which explains the number of Italian restaurants here.

I haven't spent much time in Boston but as a visitor to the core areas of the three cities, I found Chicago and NY to be much more "Italian" then Boston.  Could be I just missed the Italian-ness in Boston.

North End of Boston is the closest I've felt like Italy in the States. The removal of the freeway is doing a number of the grittiness of that end of town. Gentrification and all that.
