Bachelor night meal ideas? 

Sunday night my wife will be at a birthday thing for her best friend, the kids are at their mom's so it's just me and the dog hanging out and watching football. 

I want to cook something delicious, that's easy enough to be worth cooking for one... 

One thing that sounds good is something quite spicy--I have a much higher heat tolerance than my wife, so when we cook at home I don't cook anything to my level because she won't be able to eat it. 

Any thoughts?

I'd go with pork - I find the pork fat/grease holds the spice and delivers it to the right areas of the tongue

Pork belly, Cutlets, sausage, any Mexicana Carnitas dish simmered in flavor

Duck breast and make a chutney , you could make that spicy. 

Or make a very spicy sauce for the duck breast and then have some kind of a cool salad or vegetable.

Yeah, I find that any time I make an Asian dish it's like 17 different steps of mise en place and a ton of ingredients. Plus then you add the cooking of the noodles. I like the idea, but looking for something easier. But I could pivot from that and make some other fun shrimp dish. It cooks so insanely fast that it's convenient.

That might be a good idea... I do enjoy pork belly burnt ends, and that's something I could just toss on the smoker for a few hours and it's mostly set and forget. 

Duck breast and make a chutney , you could make that spicy.

Or make a very spicy sauce for the duck breast and then have some kind of a cool salad or vegetable.
Duck is intriguing. In addition to my wife's lack of spice tolerance, she has a poultry allergy... So duck is one of those things I never actually eat as we don't cook it at home, and it's also not a very common menu item at restaurants we go to (on the rare occasion we go out). 

Hunan beef.

That looks delicious. Again may avoid just due to prep time, but I do love some good Hunan food. My favorite of the Chinese regional cuisines...

That looks solid and easy, and I think we have everything already in the house for it. That might be a winner.

My wife hates duck so it is my go to when she's gone.  My favorite protein,  I could make it in my sleep.  Easy solo meal.
If I decide to go buy some duck, this might be the answer too...

How's the weather? Cooler - congee with shrimp and pork and sambal olec. Warmer - grilled or fried spicy chicken sandwich.
