Yeah, our typical wine comes from Beverages & More (BevMo), where between case sales, their regular promotions, etc, there's always some deal. My wife's regular wines are a Chardonnay from a winery called Unruly (which is a house BevMo brand) that ends up being $8/bottle and a cab from The Buccaneer (possibly also a house brand?) at $10.50/bottle. She'll have a couple slightly more expensive bottles rotated in here or there, but that's the bulk of it. And most days I'm drinking beer, not wine. 

We only get into pricier bottles when we're doing wine trips. And then those bottles are the ones we break out when we're cooking something fancier that pairs well with wine, on the days when I decide to drink wine instead. The biggest issue we've had is that we've often had the low-end (those listed above), the mid-grade (reds in the $20-40 range), and the high end (bottles in the $50+ range) and we'd almost never drink the top end. Since I keep the low end stocked and the top end rarely would be opened, we'd constantly be hollowing out that mid-grade range. So we've been trying to be better about being willing to open those nicer bottles.

It's like starting with JW Red and finishing with JW Blue. That's just dumb.

Same here.  I typically get ahead of this by ensuring that *I* am the one selecting the next bottle.

I stopped dining out at fast food and anything like Applbies years back.  If we go out, it's to a decent place.  I took my kids to places like Bob Evans fairly often just to not have to cook for them.  We have some pretty good options around us, except no French.

BTW I just looked it up to see the menu and locations (if there was anything out here), and noticed that the menu said 21-day-aged... And that's a little ambiguous, so I googled and apparently one of the restaurant owners confirmed they're wet aged, not dry aged.

hmmm, dry aged has seemed to be more common in these parts so I didn't ask last night.
I did ask the server a couple questions about the steaks and menu, she didn't have much for answers.

looking back, the steak didn't have that noteworthy dry aged flavor.  I should have guessed it was wet aged.  I assumed it was because it was 21-day aged and not 30 or more.

I like to patronize local wineries and will almost always stay away from big brands. My favorites in my area are Belgian Horse (Middletown, IN), Brown County Winery (Nashville, IN), and Oliver (Bloomington, IN). Oliver has really blown up and I might have to exclude them if they keep that crap up. I guess I'm a wine hipster.

We do the same for restaurants. We steadfastly refuse to go to any chain and will go to a local place as a rule. This is doubly important for pizza. There's a place called Jack's Pizza that's in a very rough part of the east side of Indy that is fantastic. The only time we do a chain restaurant is if it's a quick stop on a road trip or if someone wants to meet us there.

I assume wet aging retains more water weight, not certain

I've done wet aging in my fridge
I leave the dry aging to folks with walk in lockers
