Leaving here at 2:30 for 6 PM flight to NYC then to Gatwick, arriving noon their time, no doubt tired and grimy.  I guess that's 6 AM our time.  I hope I can get a few winks.  I arranged a ride from there to Southhampton, hope that works OK.  Should be able to check into the hotel when we arrive, get cleaned up, and maybe nap a bit.

The biggest thing I've noticed is that properly cooked turkey breast is very moist and succulent if it goes onto your plate IMMEDIATELY after you slice it. If someone slices the turkey, and then it gets put out onto a platter, and then 15+ minutes go by while the family all gets seated, and then you FINALLY get it on your plate to eat... It's dried out. And what do you think usually happens in most houses on Thanksgiving? So you gotta douse it in gravy.

In this way it's a lot like brisket. If you slice a brisket and then it sits a while before it gets eaten, it can go from the most moist and decadent BBQ meat in existence, worth eating without any additional liquid, to dry and requiring BBQ sauce to hydrate it in a VERY short time.
If you cook your turkey breast down in a roaster oven, the breast will stay moist for quite a while. I also inject butter into the breast which also helps. I have sliced the turkey, put in on the tray and it was still moist a couple of hours later and even the next day.

We always inject the deep fried one, never any issues with lack of moisture.

I always brine the BBQ bird, and also never have any issues with moisture.

My mom, grandma, and mother-in-law used to cook turkeys in the oven.  ALWAYS had issues with moisture.

So there you have it. :)

Apparently they found two apparentl smugglers boats very near where I live.   They were abandoned- and they were able intercept the passengers from one of them.  It was 18 illegal aliens from Ecuador.  

Meanwhile- my better half is stuck in Tel Aviv.  Going into bomb shelters multiple times a day.   What a world.

Brother, been thinking about you a lot through this. It's even worse than what I dealt with two months ago when my kids were in Maui just miles away from the fires--as horrible as that was, there was a level of predictability and I knew that as long as I didn't see news stories about resorts ablaze, they were fine. 

Glad to hear she made it from Egypt to Tel Aviv safely. As terrifying as this must be for both of you, I'm sure that was the riskiest part and she's through it. 

And yeah... What a world.
