Duck is my favorite protein.  Very easy to cook breast with the nice fat cap.   Definitely not past medium or it is ruined.   I keep it med rare.

Whole duck is a different cook.  Wife does not like smell of duck fat rendering.  

Usda can F off.   Pork trichinosis is exceptionally rare in US.  Pork is leaner these days.  I would never cook a chop or tenderloin to well.

Favorite protein is an interesting thought, I'd guess tofu is not going to get mentioned affirmatively.

Good smoked salmon would be near the top, for me.  Obviously a really good steak.  A lot of types CAN be good of course, really good BBQ is tough to beat as well.  I had ribs once that spoiled me.  Really good brisket, pulled pork, works for me.

Actual fresh fish cooked properly would be up the list but very hard to access these days, walleye, NP, mountain trout, yup, arctic char, ...  then scallops, probably my favorite seafood, king crab lags, not so much for lobster, really good Calabash style shrimp works for me, but tough to access of course.  Lamb and duck are common in France and usually excellent.

A bit of an oddity, I used to go bird hunting, dove mostly, they are really good if small. 

Of course, the universal favorite would be eggs, I have to think that so.

BBQ would be a beef rib

pork would be thick cut smoked bacon or belly

fresh fish is good, but lacks some chew and flavor

I think I'd go with any fish fresh caught over any frozen, we have great luck with the steelhead trout from Costco of the frozen type.

We had some terrific smoked fish up in the UP a while back, Marquette had a place.  Outstanding.  The hotel had a patio and dinner was smoked fish and crackers and a Sancere and a spot of cheese, which I also forgot to mention.

I like being an omnivore.

There are some places around that use trimmings for their burgers. I'll order one with no bun and eat it like a steak. Love it.
