Our wood shop teacher used to love telling us about the student that got a screw driver through his forehead because he tried to use it on a wood lathe like a chisel.  Or the other student that had his arm torn off when his long shirt sleeve got caught and wrapped up on the lathe.  In hindsight it was likely all shop class legends.
They actually showed film of some guy getting eye surgery because he didn' wear safety goggles. And he had to be conscious and move his eye around for the surgeon picking out debris/metal fragments. I aways wear them even when weedwacking,so the scare tactic worked

But as Judge Smails said in Caddyshack "The world needs ditch diggers too."
Take the shovels and crack corporate a-holes in the head. Then go see local/state/federal reps and do the same thing

Ditch diggers back hoe excavators make a TON of money. A whole lot more than Fine Arts majors do, with zero debt.

I didn't try to read the Chinese version (why is that there?).

Blank guess would be part of trying to get Chinese restaurants run by immigrants to pay what they’re supposed to in taxes.

Possibly.

I read an article about the Chinese restaurant thing that was fascinating. Basically, if you're in every small town in the south, there's a crappy little Chinese place run by actual Chinese folks. People immigrated over, put to use the skills they had and worked their asses off (7 days a week, full shift, push labor laws with kids in the kitchen) so they could get the kids into better careers. (Some of this is borrowed from the story of a Laotian doughnut empire in Southern California)

And then the kids went off, got their art history or chemistry degrees, got white collar jobs and didn't want to do 80 hour weeks in the kitchen. Parents got older, had enough to live on, swaths of the places closed down because no one wanted to take them over. In a way, a nice example of the American Dream.

In any case, I need to find good Greek food.

I've heard that there are places in Greece that serve good Greek food. :)

Every place around us has "Mexicans" cooking in the kitchen.

Definitely regional. Very few Greeks around here but plenty of Asian representation, especially Chinese, Vietnamese, and Korean.

We have some good Greek places near us, a couple are local chains that are pretty solid and one is closed now for a major expansion, should be open later this year I hope.

What we don't have is a real French bistro.  We have two Persian restaurants within a mile of us, but no French.  Vietnamese, Korean, Japanese, a plethora of noodle shops have caught on, Mexican of course, Chinese of course, South American (which is a nice place), two great Indian places, Italian, no German that I know of ... or French.

There are several French bistros downtown.  Not much out in the suburbs.  We do have a lot of Cajun places, some of which also make some classic traditional French dishes.
