They won't let me give blood anymore. The burnt orange color scares the hell out of the doctors.

I mean, the eggs are a pretty important part of the dish named "scrambled eggs and chorizo."

I make a dish that I call "Pig-stuffed pig-wrapped pig" that you might like.  It's a pork tenderloin, stuffed with chorizo, and wrapped in bacon.  I like to BBQ mine but you can bake it or grill it, too.
Oooh, that sounds good. 

Do you simply slit the tenderloin down the middle to stuff the chorizo in the middle? Or do you try to actually cut it and pound it thinner to make a roulade? 

Do you brown the chorizo first? I assume so?

I slit it and pound it out a little, but still just fold over and toothpick it back together, which also helps to hold the bacon onto the outside.  But doing a full roulade would likely work well and would distribute the filling more evenly  throughout-- I've thought about doing that but haven't ever taken the time to bother.

And yes brown the chorizo first, I also include some finely chopped onion and jalapeno and saute in with the chorizo, and then usually a little bit of cheese (whatever I have lying around but the strong flavor of gruyere works well here and it's one of my favorite cheeses) before layering onto the meat as the filling.

I know I'm injecting some German or Cuban into this, but some sliced pickles would rock inside this.

You must be an agent of the pickle lobby.  I absolutely loathe pickles.

But, some diced up apple or pear or apricot works really well in the filling.  Those fruits are always great with pork.

My son used to not like tomatoes, onion, or cilantro...

...but loved salsa.

I was a picky eater as a child. Then I got to college and was embarrassed to be picky in front of people. 

Turned out, there's a lot of good food out there. More than Pizza.

I first had pizza when I was 16.  I first had Mexican in college.  My Dad was an extremely boring and picky eater, so we were as well.

I like good pickles, but not the ones Aunt Bee made.

Fixing spaghetti sauce at the moment.
