Oh man that sucks.  For lunch today, I had the smoked Tomahawk Ribeye from one of my local BBQ joints.  It didn't suck.





that looks incredible. I just made one on my grill not that long ago. I found this butcher shop not far from me that sells Australian Wagyu tomahawks. Think I'm going to try that next time I go back there. Last time I was there I bought an A5 Japanese Wagyu ribeye. $129/LB. It was really good, but I don't think worth it. Even the guy who sold it to me told me he likes the Australian Wagyu better because the really expensive A5 Japanese stuff is just too much fat, too rich. Think I agree with the dude after actually buying it and cooking it. Kinda insane how you cook it with zero oil in the pan and there is so much fat that renders out by the time you're done looks like you put a gallon of oil in the pan to start cooking it.

so, do they smoke the entire bone-in rib block, slice and then grill for a pattern?

That wasn't actually my tray, just a pic from the internet.  My tray looked almost identical, though, but with a Shiner Bock instead.

And honestly I don't know how it was made, but that's probably how I'd do it.

No it's BBQ-- they're smoked over post oak, and seared.  And they have a limited quantity, they sell out early.

I'd guess Fearless is right, and that they smoke the whole rack uncut for X amount of time, and then cut them into steaks and finish on the grill. I think that would make more sense than separating them, and then smoking them, where they'd be more likely to dry out.

It has really good smoke flavor but not overpowering, not as much as a brisket or beef rib would have, so they don't leave it on the smoke for a terribly long time.

The headline is a bit misleading - they aren't restricting use of gas now, they are banning new builds from using gas in the future.

I don't know that it has any higher or lower carbon emission than other fossil fuels, though it is cleaner for other pollutants.
