Chili just a knock off mole. Which I mean to make one of these days. I've been put off by the nuts, because one daughter is allergic.
Chili and chile are two entirely different things, which is why I made the distinction.

Chili is a dish of meat, chile peppers, and spices.

Chile is a sauce or gravy made from chile peppers, and spices, and in some cases as you say, nuts and other additives.  Mole is one type of chile sauce, but there are dozens more throughout Mexico, all regionally specific.  And of course New Mexico and Texas have their own versions of chile gravy as well.

I've made mole and many other Mexican chile sauces before, I really enjoy experimenting with the different spices and flavor profiles.

I've spent a lot of time in the interior of Mexico and I don't think I've ever actually seen Texas/American style chili, anywhere.  They have tons of dishes consisting of various braised/stewed proteins in with chile peppers and spices, but nothing that matches the consistency and flavor profile of what we call chili.

Mole isn't even a dish.  It's a sauce that can be used as a marinade, or a cooking liquid, or a finishing sauce, or all of the above. 

And it's just one of many.  Throughout Mexico, there are numerous different sauces of similar construction but differing ingredients, which create a broad flavor profile.

Actually the best thing about Cali is that we attract people from all over the country and the world, and they bring their culinary traditions with them. So we can sample pretty much anything on earth.

I can even find Cincinnati chili here in SoCal, not that I'd want to.

Ah yes, the Very Different meat and chile pepper based sauce in Texas v. the meat and chile based sauce in Mexico. This reminds me of Cali's actual big contribution to the world, which was ripping off White Castle but adding clowns to give us McDonald's.

You seem confused.  There's no meat in mole.  It's just a sauce.

You can of course use mole to prepare dishes with proteins.  I like to use mole as an enchilada gravy.

But it's not a dish.  It's a sauce.

You are telling me there is a Big Difference between a meat and sauce dish and a sauce that you put on meat to make a dish.

If they can call a dish with beans added "bean soup" instead of chili w/beans, anything is possible semantically. 

This, despite the fact that there is nothing soupy about it.

Far be it from me to defend McDonald's, but whatever Cali did worked. It's the biggest chain in the world. 

And unlike White Castle, it can actually be eaten sober.

I love a good crawfish boil.

Wish I'd done more of that when I lived there.  Even despite the fact crawfish were so expensive there.  Never really had the people, though. 

I put one on once, after some badgering, for some girls in my church who wanted to "try it."  I resisted for a while because that's not something I was willing to do on a maybe.  

As I thought, they were "meh" about it and I wound up with like 30 lbs of crawfish in my freezer.  And was out well over $100.  

The things we do when we're single and chicks are hot.

Ray Kroc, the former CEO, was speaking at UT-Austin sometime in the 70's, I believe, to the business school.  He asked them if any of them could tell him what business he was in.  A student raised their hand and ventured the guess "You're in the food industry."  When he said that was wrong another guessed "the restaurant business."

He said that was incorrect, and then asked them another question.  "Which one of you can't make a burger for yourself that's much better than what McDonald's offers?  I bet all of you can.  If I competed in the context of the food industry, we'd probably go out of business."

Then he told them he was in the real estate business. 

IMO the man knew what he was talking about, and that's what they did that worked.  McDonald's aggressively scooped up high-traffic property everywhere they went.  As he said, he used real estate to sell convenience, not food.
