I realized a Vietnamese pizza shop has opened near me. I must investigate.
You should.  One of our local places makes a banh mi pizza that's really tasty.

I don't know, bwar...

1) Mexican places around here have been putting carne asada on top of fries for as long as I've been alive.  They also put carne guisada on top of fries.  And conchinita pibil on top of fries. And carnitas. And al pastor.  And tinga.  And chile con queso.  And...

2) We've had Korean bulgogi tacos here in Austin since the mid 2000s.  And kimchi fries.  When did YOUR food truck guy start doing it?

3) Tamales at Christmas have also been a tradition in Mexican households around here since well before I was born. Consequently gringos have done it ALMOST as long.  Here in Texico it has also become a Thanksgiving thing, for folks who don't want to do the traditional turkey.

Oh, and then there's homemade tamale dressing for thanksgiving.  That's something special.
I'll give you fish tacos, though.  (Although I had those in Mexico in the 70s, as well... ;) )

The thing about anything that starts in LA is that it if it becomes popular, it's going to spread out from here quickly; people keep leaving and moving to Texas, you know... Can't keep much a secret around here. 

So it's hard to really identify a true "local" food that hasn't spread or been copied elsewhere. 

The bigger thing about SoCal is that the "region" defined as anything from probably Ventura down to the border is a population of over 20M people. So the best way to describe it is that we've got just about EVERYTHING.

My principal died in a car accident yesterday.  Sudden and random feeling....she was a year or two away from retiring, too.

Ha,went to the corner beer guy,he had some "old" Oktoberfests in the back room that were going back to distributor.Sold a 12 & 6 to me for practically price $16.00 the 12 was Founders one of Mi's fine Micro's,should be set for UM/MSU,Iowa/UW,tOSU/PSU - tilts 😎

Well we all know wikipedia is always right...

And yeah, like I said, depends on "when" the Korean tacos were "invented" in SoCal.  There were two different food trucks regularly serving them in downtown Austin in the mid 2000s, before the "Chi'lantro" food truck dude made his entire business out of them starting in 2010.  The earliest "citation" in that wiki article, is that they appeared in SoCal in 2009.  Make of that what you will.

But as far as "carne asada fries"-- like I said, places have been doing that here since before I was born.  The wikipedia "citation" puts it early 1980s.  But Mexican places around here always served french fries, and hamburguesa, too. In fact, because their flattop griddles are...ummm... so "well-seasoned," let's say... hamburguesas at Mexican restaurants are always pretty great.  But that aside, as long as there have been Mexican places making dishes that included carne asada, or carne guisada, or al pastor, or anything else of Mexican origin, there have also been restaurants that served that stuff on top of fries.  Because America loves to be fat, I suppose.  But I've been able to get any and all of that since the day I was born.  In fact, my earliest memories of eating some of those proteins were on top of french fries rather than inside a tortilla, at a local taqueria around the corner from my childhood home named "La Feria."

You should.  One of our local places makes a banh mi pizza that's really tasty.
I made banh mi sandwiches the other night with pork belly. Well, very American ones, since my wife hates pickled anything so she got slaw.

I feel like it had to be a coonass who first looked at a bug in the ditch and thought "I bet that would taste good with corn and potatoes."  But I don't know that for sure.  Southeast Texas and even as far as Austin, in small pockets, eat boiled crawfish.

However.

The "crawfish boil" is not just boiled crawfish.  It's not a restaurant thing.  You do it at home, outside, with at least a dozen of your friends or family, preferably at wooden picnic tables.  The crawfish boil is a social event as much as a meal.  Everybody brings their own veggies that they want to throw in the pot and let them soak.  Host provides the corn cobs and taters, tho.  It's polite amongst friends and family to chip in $5-10 for expenses, though certain occasions warrant that the host springs for everything.  Water and soft drinks are tolerated.  Beer is preferred.  Wine is grounds for an ass-beating.  You can be all the sommelier you want in other settings; this is not the place for it.  If it doesn't last for at least two hours, you did it wrong.  

I'm cheating because this is not technically a food, but I don't know what else to put.  

There are also some people in TX and MS who do this, but they got it from us.

Oh, and I'll definitely concede the tritip to you, in addition to the fish taco.  I'd never even heard of tritip before my first visit to California in 1995.  It's quite tasty.  So, thanks for that!

There is this gawdawful desert that people serve out here that is Green Jello with disgusting things suspended in it such as shredded carrots, raisins and cottage cheese. 

Vomit inducing.
