As a Zymurgist your brewing operation wouldn't allow it either - I'm guessin'
Lots of the best Belgian beers are a result of local wild yeasts and open fermentation, so a cleanroom would be counterproductive.

Brewers trying to create incredibly consistent lagers on the other hand...

Ya sort of an outliar but that's accurate and intersting.Think how they stumbled onto that.Well we'll leave some slots and slits up by the rafters open and hope mother nature blows or wafts in something that will work.IMO aliens tipped them off

Well that's how brewing was discovered, to be honest. Nobody knew that yeast existed. It was more that if they put stuff in the same pot as the last batch, they liked how it worked. They didn't really know why, but it did. As brewing became more of an "industry", they still didn't understand the actual nature of yeast, but they realized that if they pulled the stuff off the top of one batch during fermentation and put it into the next batch, it would make the next batch create beer too...

I'd venture to say that most of the natural fermentation Belgian beers that 94 is referring to are probably beers that a typical Bud Fat drinker wouldn't like... They're funky. The Belgian "Trappist" or abbey ale styles are not fermented like that at all. They use very unique yeasts, but the brewing process is as clean as any typical brewery.

Santa's list of "naughty" and "nice" children has its roots in Belgium and the Netherlands where their version of Santa Claus, Sinterklaas, kept a similar list. The Norse god Odin kept two ravens that would listen at people's chimneys to find out who was good or bad.

That reminds me of a time that I saw just one car parked curbside on the entire street, right in front of a fire hydrant with the trunk wide open and no one in or around it. 

I'm sure that there must have been a hidden camera involved.
