Halloween is the best one.

I put up Halloween decorations after Labor Day - just a few items to decorate my kitchen counters. Minimal, yes, but take note - I have a living Halloween decoration homesteading my place year-round:

Ya I was gonna bring that up a bit sloppy in your prep work - unlike you. But did you eat it proper over the sink as the uppity fooks such as myself do?

Nah, not a prep work problem. With cacio e pepe you cook the pasta in just barely enough water to cook it so that the pasta water is very starchy, which emulsifies the sauce. (Need good pasta for this BTW, boxed Barilla doesn't work.) You pour off and reserve any excess pasta water in case you need to re-add it as you build the sauce. My issue was that when trying to pour off the excess, there wasn't really enough to even pour it into a measuring cup.

To which I thought "oh, that's perfect, I didn't use too much water" when I should have thought "I'd better use the faucet and get a little more water ready to make sure I've got SOMETHING if this seizes on me."
