I scrambled 4 eggs last night and paired them with the remainder of the leftover Thanksgiving ham - couple slices of toast

I called it, "supper"

Sounds like a great breakfast. 

Eggs are fine, as an ingredient.

Like in a Greek Omelet, with gyro meat, feta, onion and tomato, with tzatziki sauce and home potatoes on the side.

I made breakfast tacos for lunch.  Eggs, bacon, refried black beans, salsa pura, cotija cheese, on home-griddled tortillas.

We're going to do conveyor belt sushi for dinner tonight.
