I like to think and thank the Czech influence for the presence of pilsners in Texas.  That would be my guess.  As a person of Czech heritage, last name only, if we're really honest about it, they are a stubborn uncompromising people.  You can do your IPA thing, we're going to stick w the pilsners.
Well pilsners have always been the largest selling subcategory of beer in the USA.  But that's because Bud, Miller, and Coors are all considered pilsners.

Still, yes, the best and probably most famous craft-brewed pilsner in Texas is Live Oak Pilz which is a distinctly Czech pilsner, not a German one.  And we also love our kolaches and klobasnicky here in Texas, so many thanks to your Czech ancestors for settling here.

Although I must admit there's also a heavy German influence in Texas as well, which is the origin of smokehouse sausage within the pantheon of Texas BBQ dishes.

A friend last year brought back some authentic Czech Pilsner he purchased in some little hamlet in PA.I forgot to keep one of the cans as it was written in Czech script.Damn that was some of the finest suds ever to cascade over my buds.Very disappointed in myself for that glaring oversight

There's a category of bar/restaurant called "gastropubs" that in general focus on a relatively small menu of high quality food, as well as having a decent variety of high quality beers and sometimes craft cocktails available as well.  As you might expect from their name, they also tend to be fairly pricey, at least compared to standard "pub-grub" so they end up being the kinds of places I go when traveling for business and am on the corporate expense account, rather than paying for it all myself.

Yeah, I find myself enjoying restaurants that fit into that "gastropub" style. But it's not always about the "style" of food, it's more about the fact that they actually care about their food. So many restaurants just seem dull and mediocre, and at least the gastropubs try to step out from that.

But I don't think we should denigrate "pub food", as long as it's done well. For example, if you look at the Falling Rock menu, it's greasy pub food. But it's really darn good, and reasonably priced. We have a place out here called Heroes and Legends that's kind of a sports bar / beer bar / peanuts on the floor joint, and again their food is reasonably priced pub food but done well. Especially they do things like house-made potato chips, which are a nice touch. Only complaint I have there is that everything is on the salty end (probably to make you drink more).

Oh yeah I'm plenty okay with standard pub food.  My favorite cheeseburger in Austin is from a pub. My favorite fish and chips is from another pub. But that kind of food tends to be pretty heavy, and I can't eat it as often as I once did.  Gastropubs tend to go more toward high quality ingredients, a little more clean-eating, some of them are farm-to-table, all of that kind of stuff.  That's all a bit easier on my gut, especially after downing a few delicious beers to wash it down...

They call themselves a gastrobar, which is close enough.  It's good, they have interesting food, and decent wines.  It stays busy.  You can figure on $40-50 per couple if any alcohol is involved.  It's "interesting" how two beers with dinner jacks the price up by $16 or so at places like this.  INstead of a $30 tab, it's $45 with tip to come, and our sales taxes are rather high, like 9% or something.

I surmise the rough equivalent in France would be a "bistro", a term overused in the US, or misused often as not.  There are a lot of good bistros over there, duh.

They don't upcharge for wine as much as folks do here.

Ha, It wasn't a case. 

The last 12 pack I bought lasted well over a year, so I dare not even think about how long it would take me to polish off a case. 

I'd probably have to bequeath it to someone in my will.

That's even higher than here...

I was about to say they probably don't have a state income tax, but they do. Yikes.

In Texas we have high sales tax (6% state and 2.25% local here in Austin) and relatively high property tax, but no state income tax to make up for it.
