Spatchcocking is easy.  It's what I do for smoked birds.  It doesn't change the flavor or anything, just cooks faster and more evenly between the light and dark meat.

Toughest part is getting the backbone out.  A set of heavy duty kitchen shears is mandatory.  Or, there's a guy on surlyhorns, who uses his reciprocating saw...

I have that done for me. Arthritis and shit.

Call the nite before and give them a reminder or give me their numbers & I'd be obliged.It's the least they could do after that generous spread,unless of course their down & out like me 🙃

Only going to be 7 this year. My wife and the kids, and then her two close friends (sisters of each other) coming down to join us. 

Relish tray (appetizer)
Filet mignon
Green bean casserole (family recipe, not the "standard" one)
Mashed potatoes & gravy
Roasted beets
Dinner rolls
Chocolate bourbon pecan pie
Another dessert (brought by guests; don't know what it is yet)

Happy Thanksgiving everybody!

I'm feeling extra thankful this year, for obvious reasons.  

Thankful for lots of things, and people.  Among them:  this place--a thing--where I can goof off at work during down time with y'all--people!

I used to think this place wouldn't have as much value to me if I didn't love college football.  Over the years as the sport changed and my interest wanes, I now realize that's not true.  Turns out, for some reason, I just like talking to you goobers, about whatever.
