Made this last night... MMM... Anchovies.not a big fan of anchovies or sardines, but had a pasta in Sicily that had both with toasted breadcrumb and it was out of this world.
It's pasta burro e alici, or pasta with butter and anchovy.
I saw it on Bobby & Giada in Italy, and knew I had to give it a try.
Very simple recipe. Gently melt the butter and anchovy (perhaps with a little boiling pasta water for heat, although you can put the pan over the boiling water as a double boiler to do it gently) until the butter is melted and the anchovies have broken down to become part of the sauce. Add the pasta, and enough extra pasta water to get the sauce smooth and emulsified, and you're done. 4 ingredients.
Definitely a learning experience. The first bowl (pictured) didn't have enough pasta water, which is probably why it looks more buttery than saucy. When I went for seconds, I added some water and suddenly it was completely transformed into this silky delicious amazingness.
Can't wait to try it again. My wife... Not so much. She'd never had anchovy before so she was willing to try this, but wasn't exactly a fan.

We were doing it every other Friday during the pandemic, and eventually came up with a mix of three different recipes until we got it right.
Usually the simplest recipes are the best. But sometimes they are also the hardest to make because of the technique. Cacio e pepe is just pecorino cheese, toasted black pepper, and pasta water- but I think it's the hardest pasta to make. Too much pasta water you've got a soup. Not enough pasta water you won't get a creamy sauce. Not enough heat on the pecorino you get a weird watery paste. Too much heat on the pecorino you get a nasty gooey string cheese. Timing, amounts, and heat control have to be perfect to make that- it's tricky af and super easy to ruin.

So I catalogued the missed opportunities for Purdue...
Here’s the ones I count:
- Bell PI: It was a blatant PI. The DB tackled Bell in the end zone on a perfectly thrown pass, well before the ball got there, where Bell had position. That was a sure TD. Instead, that brought up 4th down, two penalties pushed us out of FG range, and 7 points turned into zero. Granted, the refs were to blame for this one, but it would have been a big momentum boost for the Boilers.
- Anthrop dropped TD pass: Hard as hell catch, but having a FG instead of a TD there is a -4 point swing.
- Fake FG/INT: The FG was potentially 3 points—if Durham secures that ball, it’s not a TD on that play, but it sets us up with first and goal inside the 5, so potentially 7 points. Instead it was zero. I'll call it a -4 point swing because even if he makes the catch but you don't get the TD, then it's a chip shot.
- 1st and Goal at the 5 / 2nd and goal at the 1: We got three points out of it, but you need to be able to punch it in there for 7. So that was -4 points from expectation.
- Milton dropped TD pass: No excuse for that drop. Another -4 point swing.
That's 23 points basically just left on the field.
And I realize someone can look at that and say it's one-sided and OrSU must have had similar chances... But no. They really didn't. Probably their biggest missed opportunities were turning it over on downs 3 times... But that's somewhat of an outgrowth of being 5-14 on third down, and while they had decent field position on all of them, it's not like they were giving up a FG to go for it--they were still in punt range if they didn't go for it.
