If I were to pick 3 QBs for an All-Time OU team:
Baker Mayfield
Sam Bradford
Jamelle Holieway
.

I won't speak for OU but from a rival perspective, those are all appropriately painful selections.

Others that come to mind are Jason White and Josh Heupel, not sure how their stats stack up against those first three.

Yeah, it's weird leaving a Heisman winner and national champ off, but even White's big season is blown out of the water by the more recent guys.  I don't want all these all-time teams to be big-stat recent guys, either.
I like the variation with having big passers OR an option whiz in Holieway.  He sort of represents all of those option guys from the 70s and 80s that had worse stats, but led some legendary offenses.

Yeah if you want the stats to look good as a measurable for your game, it's likely you're stuck with the modern guys.  

The oldtimers just aren't going to measure up.

I just want a mix and will include older guys as long as they won't castrate the team's ability to be productive.  Those old single-wing and option QBs could have decent passer ratings, but some were dreadful.

You can't have a guy who threw 12 INTs in 80 attempts help you any in beating your friend in a stats-based game.  You just can't.  But as long as they're serviceable, I want them included.
